 
			 
			 
			 
			I saw a random headline on the internet, “20% of Americans light up within an hour of waking up.” Of course this brings breakfast cookies to my mind.
The breakfast cookie is basically a loaded oatmeal raisin. Three 1 ounce cookies is about 500 calories of energy. I cut the dried fruits by hand. The processor makes a blob instead of morsels. Mix up the nuts and seeds too. They’ll improve the texture over just fruit.

Ingredients
- 2/3 cup Vegetable Oil
- 2/3 cup Almond Milk
- 1 cup Brown Sugar
- 1 tsp Vanilla Extract
- 1 1/2 cup Flour
- 2 tbs Egg Replacer
- 1 tsp Baking Soda
- 1 tsp Cinnamon
- 1/2 tsp Salt
- 3 cup Rolled Oats
- 1/2 cup Raisins
- 1 cup Dried Fruit, chopped
- 1/4 cup Flax Seed
- 1/4 cup Chia Seed
- 1/2 cup Walnuts, chopped
- 1/2 cup Sunflower Seed, roasted
- 1/2 cup Pumpkin Seed, roasted
Instructions
Cream together oil, milk, and sugars.  Add vanilla and beat well.  This is a dense cookie dough, the lift can only help.
Sift together flour, soda, egg replacer, cinnamon, and salt. 
Combine well with wet ingredients.
Stir in oats, fruit, seeds, and nuts.  Mix well.
Bake at 350 degrees for 11 minutes.
Notes
This is pretty much a whatever you've got cookie.  
Any dried fruits, nuts, seeds, grains are all fair game.
There is a fine balance on this one, it will dry out if over baked.  
Remember that it keeps cooking for a minute or so after coming out of the oven.
