Ingredients
- 1/2 cup Pecans, Finely Chopped
- 1/3 cup Light Brown Sugar, Firmly Packed
- 1 Tbs. Flour, All Purpose
- 1 tsp. Cinnamon
- 1/8 tsp. Nutmeg
- 1 Tbs. Vegetable Oil
- 1 1/2 cup Flour, All Purpose
- 1/3 cup Sugar
- 2 tsp. Baking Powder
- 1 tbs Egg Replacer
- 1/2 tsp. Salt
- 1/2 cup Vegetable Oil
- 3/4 cup Almond Milk
Instructions
Mix together pecans, brown sugar, 1 Tbs. flour, cinnamon, nutmeg, and 1 Tbs. oil and set aside.
Sift together dry ingredients. Add wet and muffin mix. Lumps are fine. Less is more.
Fold in half of pecan mixture.
Fill tins and top with remaining pecan mixture.
Bake at 350F, 30mins. Test with a toothpick. It should come out clean.
