This recipe is a cheat. A true snickerdoodle is a refrigerator cookie. The battery dough gives a very specific texture. This one comes close without the wait.

The creaming step is one of the catching points. Over doing it will make more of a shortbread.

I shall quote the big book:

Creaming Method
This is nearly identical to the creaming method for cakes. Because cookies require less liquid, it is not necessary to add the liquid alternately with the flour. It can be added all at once.
Note the importance of step 2, the creaming stage. The amount of creaming affects the texture of the cookie, the leavening , and the spread. Only a small amount of creaming is desired when when the cookie must retain its shape and not spread too much. Also, if the cookie is very short (hight in fat and low in gluten development), or if it is thin and elicate, too much creaming will make the cookie too crumbly.

Another thing I like about this one is you can replace the cinnamon with lavender, rosemary, cardamom, even a chai blend.

Snickerdoodle

Ingredients

  • 3/4 cup Almond Milk
  • 3/4 cup Vegetable Oil
  • 1 cup Granulated Sugar
  • 1 cup Powdered Sugar
  • 1 tsp Vanilla Extract
  • 4 cups All Purpose Flour
  • 2 Tbs Egg Replacer
  • 1 tsp Baking Soda
  • 1 tsp Cream of Tartar
  • 1 tsp Salt
  • 4 Tbs Ground Cinnamon
  • 1/2 cup Granulated Sugar
  • 1 1/2 tsp Ground Cinnamon

Instructions

Mix 1 1/2 tsp cinnamon with 1/2 cup sugar and set aside.
Cream together almond milk, vegetable oil, vanilla extract, and granulated sugar.
Sift together dry, and mix into creamed sugar until smooth.
Roll balls of dough in cinnamon sugar that was set aside and sheet.
Bake 12 minutes at 350 degrees.

Notes

I like to make these in 3 ounce size. They might need a little more time in the oven.
With cookies, less is more. They will keep cooking for a minute or two when they come out of the oven.
A perfect looking cookie can have a hockey puck texture without attention.

Don't over cream. Hand whisk is really enough.
