Banana muffins are one of the easiest things to bake. Yet they always impress.
And if you or a member of your family are obsessive banana buyers, you need this recipe.
I generally prefer pure banana dankness. But there’s no end to additions you can use. Like adding a topping of brown sugar, cinnamon, and chopped nuts for a coffee cake. Just pay attention to heavier items. They will sink to the bottom. Although, mango cobbler with a banana bread crust is still really good.

Ingredients
- 2 cup bananas, mashed
- 3/4 cup sugar
- 1 1/2 cup flour
- 1/3 cup vegetable oil
- 1 Tbs. egg replacer
- 1 ts baking powder
- 1 ts baking soda
- 1/2 ts salt
Instructions
Mix dry ingredients, well.
Mix wet ingredients, well.Combine and stir just until the flour is wet. Lumps are acceptable.
Scoop in
to a muffin tin. Add a couple ounces of water to the empty cups.
Bake at 350 d
egrees for 25 minutes and test.
Notes
Pretty much any pan will work, just adjust the oven time ac
cordingly.
Black, mushy bananas make the best bread.
It takes four bananas
. Not huge, but not small. About 1.25 pounds or 560 grams.
